In this recipe, we're making Orange Sandwich Cookies. Crumbly, citrus-scented shortbread filled with a delicious orange cream filling.

Growing up in India, these were a prominent feature of my school lunch box. Recreating this recipe today brings back so many lovely memories.

Orange Cookie

1. 200g All Purpose flour
2. 1 tsp salt
3. 85g butter, cold and cubed
4. 70g icing sugar
5. 1 egg
6. 1 tbsp orange juice
7. Zest of 2 medium oranges

Orange Cream Filling

1. 125g icing sugar
2. 30g soft, unsalted butter
3. 1 tbsp orange juice
4. Zest of 1 medium orange
